Christmas day was spent with my Beau and his family in Elgin. It was a hot day, the mercury dancing salaciously in the 30′s. Kicking off a large festive feast was proving a difficult task thanks to the heat. The best way, in mama Beau’s opinion, was to start the meal off with a cool, light salad inspired by a recipe seen in Taste magazine.
Tomatoes of all different shapes were used. Some sliced, some cut in half, some whole depending on their size. Bocinccini sliced in half and buffalo mozzarella torn into plump shreds. Fire-roasted red peppers torn into strips introduced a smoky twist, deepening the complexity of flavours. Basil pesto and washed basil leaves adorned the salad and completed the pretty picture. Extra virgin olive oil was poured over liberally, leaving the six of us to wrestle with each other about who got to dish up first. Dibs!
