Sunday night linguine

Sunday-night dinner at my house is mostly an unadventurous affair.  I try and keep things simple so that my evening doesn’t have to be spent in the kitchen creating piles of dirty dishes.  This is my spicy chicken liver, roasted red pepper & feta linguine.  It also works on Mondays (if you don’t subscribe to Meatless Mondays), Tuesdays, Wednesdays, Thurs.. you get the picture, right?

This is a really easy recipe; it’ll literally take you 20 minutes to prepare.  You could substitute the chicken livers for chicken breasts or deboned thigh meat if you’re not a fan of innards, so don’t be put off, okay?

What you’ll need… (serves 2)

1 medium red pepper, roasted whole with a little oil, seeds & core removed

1 tub (about 100g) fresh chicken livers (free range is always best) separated into bite-size pieces

1 tsp chilli oil

1/2 medium onion, chopped

2 cloves garlic, smashed

2 tbsp white wine, I used an unwooded Chardonnay

1 tomato, diced

fresh herbs: oregano, basil, thyme

feta cheese

1/4 packet linguine pasta

salt and pepper to season

And then…

Get a pot of salted water on to a rolling boil.  Heat a non-stick pan and once hot pour in your chilli oil.  Place the livers in the pan, being careful as they can splutter quite a bit.  Sear each side for no more than 2 minutes, remove from the pan & set aside.

Turn the pan down & sauté the onions & garlic together until translucent.  Deglaze the pan with the wine & allow to cook away gently.  The pasta water should be boiling now, so throw in your pasta & cook it until al denté.

Add the diced tomato to the onion pan & about a tablespoon of torn herbs.  Tear the roasted pepper up with your hands into thin strips and add this to the pan, along with the cooked livers.  Stir well and season with salt & pepper.

Drain the linguine in a colander & return to the pot.  Pour the chicken liver sauce into the pot & gently combine with a set of tongs.  Divide amongst large pasta bowls and finish off with crumbled feta cheese, more fresh herbs & an extra crack of black pepper – just for luck!

Voilà! Happy Sunday indeed!
